Streusel Cake Cookie
Dive into the world of heavenly flavors with this Streusel Cake Cookie recipe, a perfect blend of a cookie's crunch and a cake's softness. The heart of this delight lies in its streusel filling, a rich mix of all-purpose flour, brown sugar, and cinnamon, bound together with softened butter to create small, delectable clumps. This mixture is chilled to perfection, ready to be nestled into the cookie.
The cookie dough, a careful balance of all-purpose and cake flour with a hint of cornstarch, cinnamon, and leavening agents, provides a tender, cake-like texture. Cold, cubed butter is creamed with brown and white sugars, adding a depth of flavor, while vanilla extract, a whole egg, and an extra yolk ensure a moist, rich bite.
As these large, hand-rolled cookie dough balls are indented and filled with the streusel mix, they transform into a marvel in the oven. Baked at 400°F until the edges are just golden, these cookies strike the perfect balance between underdone gooeyness and overbaked dryness.
The final flourish is a drizzle of homemade icing, a silky combination of melted butter, heavy cream, powdered sugar, vanilla, and a pinch of salt. This sweet, creamy topping cascades over the cooled cookies, adding a luscious finish that makes each bite an unforgettable experience.
These Streusel Cake Cookies are more than just a treat; they're a multi-sensory experience that combines the comforting warmth of a homemade cookie with the sophisticated layers of flavors and textures reminiscent of the finest pastries.
