Streusel Cake Cookie

Ingredients:

For the streusel

  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 2 tsp. cinnamon
  • pinch salt
  • 5 Tbsp. softened butter, unsalted

Cookie Dough

  • 1 1/4 cup all-purpose flour
  • 3/4 cup cake flour
  • 1 tsp. cornstarch
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. cold butter, unsalted, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk

Icing

  • 2 Tbsp. unsalted butter, melted
  • 3 Tbsp. heavy cream
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla
  • pinch salt

Instructions:

  1. Make the Streusel Filling:
    • In a medium bowl, mix together flour, brown sugar, cinnamon, and salt.
    • Add in small pieces of butter. Use your fingers to mix it until it forms small clumps.
    • Put this bowl in the fridge.
  2. Prepare for Baking:
    • Heat your oven to 400°F (200°C).
    • Line two baking sheets with parchment paper or silicone mats.
  3. Mix Dry Ingredients for Cookies:
    • In a large bowl, combine all-purpose flour, cake flour, cornstarch, cinnamon, baking soda, baking powder, and salt. Put this aside.
  4. Cream Butter and Sugars:
    • Put cubed butter and both sugars in a mixer. Use a paddle attachment and mix until smooth (about 1-2 minutes).
  5. Add Egg and Vanilla:
    • Add in the egg, extra egg yolk, and vanilla. Mix well.
    • If any mixture sticks to the sides, scrape it off with a spatula and mix again.
  6. Combine Dry Ingredients:
    • Gradually add your dry ingredients to the mixer, about ¼ cup at a time, until it's all mixed in.
  7. Shape and Fill Cookies:
    • Roll the cookie dough into about 8 large balls (or smaller if you prefer) and place them on your prepared baking sheets.
    • Make a small indent in each cookie. Fill each indent with about 1 tablespoon of your streusel filling.
  8. Bake the Cookies:
    • Bake for about 9-11 minutes. The cookies should be slightly golden at the edges.
    • Tip: Take them out just before you think they're done to avoid over-baking.
  9. Cool the Cookies:
    • Let them rest on the baking sheet for 5 minutes, then move them to a cooling rack.
  10. Drizzle with Icing:
